I have 2 Hobie revolution kayaks and want to find the age of each. Is there a way to determine how old these kayaks are?

Maybe by serial #?

Its based on the serial number.....hand engraved on the stern.....often hard to find and read.
If you rub your hand slowly across the stern until you feel the engraving......use a soft lead pencil or ash or soot and rub it across the engraving in order to see the serial number stand out.
