Think of it this way- basically you want to move the sail towards the telltail that is fluttering (i.e. not flowing aft). So if the telltail on the leeward side of the sail is fluttering, let the sail out (or turn the boat upwind). If the telltail on the windward side of the sail is fluttering sheet the sail in (or turn the boat downwind).

The nice thing about learning to read telltails is that it will be very apparant when you make a correct or incorrect adjustment because the results will be instantly obvious. If for example, your leeward telltail is fluttering and you make the mistake of pulling the sail in, the telltail will continue to flutter even worse and you will know right away that you should have let the sail out.
