Make sure your rudders are amidship when you check toe. The Ackermann angle increases toe in as the rudders turn, so if you set 0 toe with the rudders turned you will have toe out when you straighten the rudders. Tape measure between rudders in the down position is the preferred method. In a pinch you can just eyeball it.
If you suddenly find that your rudders have the incorrect toe, in spite of carefully setting them years ago, check to see that you don't have the left rudder on the right side. The tiller arms (tube riveted into the upper rudder casting) should point slightly inward (towards mast base).
