I have a 2019 Outback and dont want to cut and mount swithes in the Hul...
Just looking to see other options.
I will most likely use a Gang panel running my BerleyPro Orb light, My Helix 7 MSI fishfinder, and have 2 USB ports to run my GoPros or charge phone when needed.

Best option IMO is to install it in your hatch bin. Just make sure you have disconnects for the wiring so you can remove the hatch bin when necessary. Also leave extra wiring in the hull so you can pull the hatch bin out in the event you ever need to access the hull for any reason while on the water.

I've installed a panel (for LED lights), a USB socket and a 12 volt port on my Pro Angler and regret it. The USB and 12 volt sockets are rusting (I fish in salt water) and the switch panel has gone out on my once and I had to replace it. Won't do this again.
