Short answer for Humminbird and Lawrence units is yes.
Don't know about a Garmin echo......I suspect it should work too if you make good contact with the inside hull.
Consider using Duct Seal to hold and secure the transducer inside the hull.
If you search for transducer mounting, there are several posts addressing this question....Good luck!

Sidescan sonar transducers probably won't work through the hull of a kayak. On the sidescan fish finders I'm familiar with, the transducer needs to be mounted below the level of the keel of the kayak or boat, or behind the kayak or boat, so the hull of the kayak or boat doesn't interfere with the sonar signals going out sideways.

How do you like your Garmin echomap fish finder? I'm looking at getting one of the new echomap 43dv units but I am not finding much information on Garmin fish finders. The bit I have come across says the maps blow Lowrance and Humminbird out of the water but they don't have quite as good of reviews on the sonar aspect of it in regards to marking fish or schools of fish. I've used Lowrance in a past but after coming across a Garmin this weekend, they look a lot nicer than Lowrance. I'm in a toss up between the garmin 43dv and Humminbird Helix 5.
