Post subject:  Hobie Outback(s) ? LTB, but transport?

I've been thinking about buying Hobie Outback pedal Kayaks for my wife and I. After visiting Rack Attack, and buying what they recommended to transport two Outbacks on top of my 4Runner, I got home and tried to install the Rhino-Rack Folding J's on my crossbars. The screws are too long. So, after going back, the rep told me I could saw them down to fit, and I lost confidence that their solutions would support my significant investment in to expensive pedal kayaks. So. my question is, what is a realistic solution I need to consider if I want to buy two Hobie Outback Kayaks to transport them to local lakes and rivers in my area? Is it even possible to do with one vehicle?

Here is my Hobie outback mounted on a trailer via PVC pipes. There is just enough room to mount two of them side by side on this trailer by the same method, if I had two of them.

Also, I would highly recommend using a trailer. I'm getting older and have found trailering so much easier on my old muscles, than lifting onto the roof used to be. Also means I can have the kayak permanently set up with a lot of the gear and don't have to spend time taking it on and off all the time.
