At best, the temp reading would be surface water, which probably has nothing to do with the temp where your lures are. Remember when you were a kid, and did surface dives in the lake? Very warm and comfy up top, much different even 10 or 15 feet down. So I generally ignore this reading.
I can vouch for using a "wet mount". I started out with the usual Goop install for shooting through-the-hull. This worked fine at first, but after several months I noticed decreased sensitivity, which just got progressively worse. I pulled out the transducer and discovered that the Goop had developed thousands of very tiny bubbles, which probably each reduced the acoustic signal. My new install is similar to what MWC359 describes. I did mine a bit differently, though. I used the foam pad from the official Hobie FF kit instead of the putty stuff. I Gooped this to the inside hull, being careful not to get any Goop into the cutout area. I just add a tablespoon of water, pop my transducer in, and am ready for the day. Evenntually I ran a piece of cheap Tygon tubing from the foam pad to the area just below my tackle hatch. I use a 50 cc syringe to deliver water into the gap now, which permits me to add a little more water if I am out for a long time without having to climb around out at sea to get to the transducer itself. Works great.
