So stock option seems to include a standard handle on one side, and a "knob" of sorts on the other. Can the "knob" be replaced with the handle to have the standard handles on both sides?

Yes! the steering is designed to be moved to either side....

Right. In the Hobie video it's mentioned I think that there's primary steering on the right, and secondary steering from the left; and that you can interchange them if you want. Got that. The primary looks like a nice lever, the secondary looks like a knob of some sorts - with a thumb press. What I'm asking is if we can replace the knob with a lever to have a lever on both the left and right? I imagine as you switch from one to the other there may be some 'play' to take up slack on the control lines?

Yes - you can install a second lever, and have 2 at the same time if you desire. (one on either side)
