There has been several threads about taking video on the boat, I just ran into this new product, looks pretty good, a little pricie but the high def pics would be awesome.

Thats not the waterproof one.

The one at bestbuy is Sanyo model VPC-HD700R

The one you want for waterproof (if you got the foriegn version) is VPC-CA65 which will become the waterproof model mentioned orginally when on sale here.

Actually, correction, the CA65 is already on sale (and pretty cheaply) but isnt 7 megapixel. Here is an underwater video with it: http://www.youtube.com/watch?v=S3pzYjt6Op8

Be aware that if you buy an offshore model the guarantee will not be honored in the U.S.. I'd think that would be pretty important on a $500 underwater camera.

I've done alot of helmet cam stuff with mini DV. The quality is pretty good, not DV of course, but it does offer some unique ways to mount a camera.

Sadly I have not been sailing much in the last few years so I don't have any sailing video using a helmet cam to show, but I have done some with white water rafting and sea kayaking.

Another alternative for excellent quality is a Sony waterproof case for their mini cams. Don't know if they have them yet for HD cams or not, but I get great quality from my little mini DV tape cam in their housing.
