The two load rack bars on this trailer are 50 inches apart and 43 inches wide. Can the hobie outback cradles be attached to the square rack bars and properly support the hull of my 10 ft outback? I was told by one dealer the cradles will only fit the hull well if they are 67 inches apart not 50 inches.

I would like to lay my Eclipse in its protective bag deck side down on top of my upright outback supported by its cradles on my trailer. Both would be strapped to the rack bars. Would this work and cause no damage to either craft?

67" is the dimension that fits the cradles best. You could add a sheet of plywood and extend the 50" support to the 67" for best results? Mount the cradles on the plywood. Might be best with the Eclipse bottom down. You could add a couple of wood (carpeted?) or foam blocks/spacers laid on the Outback rails as a then flat 2 supports for the Eclipse so you don't have any odd contact points on the Eclipse.
