I looked at a hobie 18 and the top of the decks were firm and nice. However the sides or freeboard(??) had a little flex with some moderate force. Is this acceptable?

if the flex seems uniform down the complete length of the hull, you are prob ok...
what you are looking for is soft spots. visually inspect inside of hull through the open port to look for something weird.. use the biggest mirror you can fit in there with the brightest light... if things look ok there,,, and the rest of the hull has same rigidity as port area. you should be ok. if still in doubt,, get other more experienced opinions
