If you were to buy a used Hobie what year would you look for and why?

For recreational sailing, it really doesn't matter as long as the hulls are solid (no delamination). Of course, the older the boat, the more things are apt to be worn (like the sails and trampoline), but then again, they're less expensive.

If you're inclined to racing, '84-'85 and '95 on are the years to get (lighter weight and more upgrades in the 90's boats).

I think the good years are 84-87 and 91 or 92 on. For 91 on look for the factory hull weights etched into the sterns behind the rudder pins. Under 70 is good. They may have stopped etching weights recently or they are under the new style gudgeons.
