Thinking about splurging on a new 16, is there anything to worry about in terms of build quality? Are the boats generally the minimum weight and race ready from the factory?

In short NO absolutely there is nothing to worry about.

New Hobie 16's are perfect, the build quality is very high and very consistent worldwide. New boats are by design a few pounds below minimum weight and everyone adds weight to bring their boat to the 320 lbs. minimum. You pick your colors and there is some optional equipment you may want to add. The power pack is very common as is some sort of covering on the side bars. Otherwise the only thing you need to add is your favorite wind indicator.

If you have an older boat you won't be able to appreciate the difference until you get on a new boat, everything just works perfectly. I have sailed lots of new boats and regularly upgrade my boat, you won't regret it.
