I just installed 2001 hulls on my old 80's hobie 16 frame...I discovered a lateral movement Castings. The hulls when I'm sailing and it seams the hull posts fit loosely in the old corner castings. I read about using tin cans to shim it or epoxying the Castings to the hull posts...I was thinking about using spray foam? Or would the spray foam collapse?

Foam would not be strong enough. There is a huge lever load up in the castings. Epoxy is a good choice or Brass/Aluminum shims.
