I've just grabbed a used outback, it's awesome but it has one too many wiring grommets for my liking. Looking to remove one as it's surplus to my needs, wondering what would be useful to replace it with, to cover the 3 screw holes also?

Thank you.

If it's just screw holes, you can buy the Hobie weld kit that has various colored rods to match your kayak hull color.

If it was my kayak, I'd just leave the grommet in place. It isn't going to leak. But if you're set on getting rid of the grommet, I'd cut a circular piece of plastic and bolt it over the grommet hole. Put Aquaseal, Marine Goop, or silicone sealant around the grommet hole and the bolt holes before you bolt down the disk of plastic to seal the joint between the hull of the kayak and the disk. This would be stronger than trying to bridge the grommet hole with globs of plastic weld, and you wouldn't need to buy a plastic welder or welding sticks.

i'm with Pete. i would leave the thing in place and make sure the plug/inserts are the solid ones without holes.
