Redoing all the cable rigging on the project boat I bought as some of it was frayed and I'm just not sure how old the other is so I'd rather spend a few dollars and just redo it. I'm planning on using stainless steel 1/8 inch cable, I've got access to cutters, crimps and all that stuff so I can buy bulk cable and make them myself cheaper then ordering them. My question is do I need to use stainless or would galvanized for the cables work ok ? I'll be in fresh water 99% of the time.

Stainless, but to be perfectly honest I wouldn't make my own rigging unless I was doing it out of spectra. You're going to spend more making your own than what it costs to buy a set that is properly pre-made.
