In the Hobie parts catalog there does not seem to be any options for a replacement cassette plug -- is one available to order somehow? I'm trying to fabricate a DIY cassette mounted motor and would like to have backup options in case something goes wrong. There are numerous examples out there for Mirage drive cassette/motor mounts but none of the available options seem to fit the iTrek 11.

According to that page the #81538 cassette plug fits inflatables. I have not myself verified so.

"Universal Cassette: Fits all models. Supplied with Passport / Inflatables / Eclipse, Part# 81538"

It seems that nobody in the U.S. refers to this as the "universal cartridge" but after extensive conversation with these Aussies they assure me it will fit the iTrek 11. I ended up order a motor/cartridge from them directly for a very reasonable price that is going to save me a lot of hassle building my own. I just hope they were right!

The SLH folks are more knowledgeable about Hobie products, accessories, and repairs than any stateside dealer I have worked with. Let us know what motor/mount you ended up with and how it works out for you.

That Hobie part 79050060 referenced above must be a special order. Googling it does not bring up a single dealer or retailer.

Yeah, I contacted multiple dealers across the US and nobody could give me a straight story. One really engaged with me, and said he would contact his Hobie rep. But even there after a week of back-and-forth he said we was getting "conflicting answers" and could only recommend the original, plastic cartridge.

SLH was able to immediately give me the low-down on the universal cassette (i think it is the "eclipse" cassette in the US) and which boats it would fit (including my iTrek 11) and this is the motor I ended up with:

I was originally going with a Watersnake 24/DIY approach which would have cost roughly $200 all-in plus a lot of annoying labor. Now for $371 (in Aussie dollars!) including shipping, I'm getting a pre-built little bugger that looks like it will suit my needs perfectly all for only $65 more than I was going to pay for DIY.
