I'm not new to hobies or offshore kayak fishing, but i am new to sailing. Just got my first AI older modle with the drop in dagger board. My question is do I have to use it every time I'm sailing or is it just used for say windy conditions over a certain amount?

The dagger board is for anytime you are sailing, except for when going mostly downwind (with the wind). For example, when the wind is coming from the side, the dagger board resists the sideways push of the wind, and helps direct that thrust forward. When you're going downwind, there is no sideways push from the wind, so not using the dagger board reduces the underwater drag and lets you go just a little bit quicker. For simplicity, just use it anytime you are sailing.
