Thinking about converting from stock 2:1 main sheet to 3:1...Any pros and cons on this? What is the length of sheet needed for a 3:1?

The only con I know of is that it limits you to one seat that can control the main sheet. It will make it easier to pull the sail in with 3:1 vs 2:1. You use the same line that you use for 2:1.

i switched to 3:1 when i realized my girlfriend didn't have the strength to pull the sheet in, so why did she need control? on windy days it's very nice, easier to control and fine tune the sail.

The only con I've found is a LOT more sheet line in the hull.
