I am considering a used Hobie Holder one 12, that is in good condition. Outside of the hull, mast and sail, are the rest of the parts generally available in case something breaks or goes wrong? I like the boat, and fits my needs, but concerned about getting replacement parts, in case something breaks?

I believe the rudder and centerboard would also be hard to find. I have one, a fun little boat.

things like lines and blocks are off the shelf parts.
Mast, daggerboard, rudder, sail, are not and will be hard to find.
