I take delivery on a slightly used Wave next month. My house is on a river off the Chesapeake, with a small beach area where I plan to pull the Wave out of the water (with mast up but sails off) when not in use.

I hope the attached sketches make sense - not the easiest to describe. Lumber is mostly pressure treated 2x8's. The curvy things are polyethylene (intended for trailer bunks) that are 1/2" x 4" x 18", bent into a bow shape to keep the boat from going cockeyed (made by Surfix, available on Amazon - reviews say they are nice and slippery).

I have two existing pilings at the top of the beach - the tops of them are at backyard level. The water is about 2-4' below the top of the pilings (depending on tide). The ramp will angle down to launch and retrieve the boat (there are some legs which will pivot out of the way - they are used once the boat is in the yard). Boat will then be pulled up by a winch past the pilings, causing the ramp to go horizontal, and the boat will sit horizontal in the yard. The hinge will simply be a 1"x8" SS bolt through the long boards and threaded into the pilings

It's gotten a bit complicated, but I'm thinking it will accomplish what I want. Maybe? Any comments/advice would be appreciated!

Sure, the 'tilt' method will work, depending on the strength/stability of the hinge mechanism.
You may wish to use a plywood platform, instead of bunks, that's up to you and your budget.
Or a plywood platform with bunks.
Some folks use plywood (framed) with outdoor carpet.
