Is it a good idea to use vegetable oil on the rubber gaskets around the boat to keep them from cracking? I'm thinking specifically about the hatch gaskets.

Absolutely use silicone, but be aware some don't really work well. The very best lube I have found so far is Danco's silicone faucet grease. You can find it at Home Depot. Here's a link to the stuff:

Veggie oil might attracts bugs, and will dry out and yellow over time, and attract sand (and who wants their boat to smell like Mcdonalds drive thru, LOL). I have tried silicone grease but it tends to attract sand. The stuff that seems to work best for me is Armorall (the stuff they use on cars). It's probably not as nice as the Hobie spray or the 303 spray (both top of the line products), but Armorall is inexpensive and seems to do a nice job and once dry it doesn't attract sand. I usually go over the whole boat after each use (once or twice a week), keeps everything nice and shiny and the sand doesn't stick to it (in Florida sand is very fine and gets into literally everything). All my Hobies are stored indoors so I don't neccessarily need as much UV protection. If your boat is mostly outdoors I would use nothing but The Hobie UV spray regularly (awesome stuff).
