Git rot vs. West system...got a 18 delam deck. Looked up Git Rot, and it says for wood. Isn't the deck sandwich foam? Will Git Rot eat it up?

git rot will not eat your foam. Its just a really thin epoxy as far as I can tell. Much thinner than anything from west I have used. Thus it has the ability to flow out and get into all the voids.

No epoxy will attack the urethane foam that's used in the hull layup, nor will polyester resins.

Polyester resin will attack styrene foam (Styrofoam). That's why the styrofoam flotation blocks inside the hulls are enclosed in a polyethylene bag. Otherwise, the fumes from the curing polyester resin would eat them away.
