Would like to know what brand, size and shaft length of motor owners of SC 21 suggest.

Power: 1HP is enough... 2HP is Plenty. You will have a very tough time finding a gas motor that is underpowered.

Brand: I have a Suzuki DT2. It has survived more than any motor should, and still starts on the first pull even with 1.5yr old gas in the tank...

Length: mine is a little short, If the crew moves forward on the boat the motor comes out of the water. If the crew stays back it works fine. A long shaft might be heavier, and harder to tilt.

You can go electric, but your range and power will be limited. The range is the bigger issue here.

I have an ANCIENT Mariner 2hp. 26 inch shaft. (35 inches total length with integral tank). Only time I have ever had issues was driving into heavy chop, prop would occasionally pop out. I am able to fit inside onboard storage lockers.
