Per the Hobie owners manual, you can load it upside down and then the rudder is deployed in the normal use position.
Years ago I owned a Hobie outback with the twist and stow rudder system.....I loaded it "seat up" on to the Subaru roof rails, outfitted with Yakima 48" bars, grab rails and Mako saddles. My car back then was a 2007 Subaru Outback.
I used and old car rubber floor mat that protected the stern while lifting the bow onto the roof.
You could consider loading it stern first too. Then the bow is on the ground while the stern is elevated for loading.
