Can't help with the being tall part, but here are some opinions otherwise...
The most important thing is for the harness to fit snugly around your waist, hips, and legs. You do not want to just hang in it...it needs to be like a part of you. While most have a wide range of adjustment, if it's still loose when you tighten it all the way, you will be miserable.
Sailors who do a lot of longer distances where you're likely to be on the wire for long periods seem to prefer the full harnesses. I do little of that, and even the best harnesses aren't exactly comfortable (somewhat binding, hot in summer, etc.), so for me less is better.
I suppose that, if I had a bad back, I'd be more inclined toward a full harness. If that were the case, though, I probably wouldn't be doing something for fun that involves moving a 320 lb. boat around!
Other than that, it's mostly personal preference. If you can meet up with other catsailors in your area, perhaps you could try on some of their harnesses (and test them hanging from the trapeze).
