I basically have an extra rudder assembly, mast, sails (although in poor condition) and random trampoline assembly parts. What would you recommend to keep as a backup and what do you think I should sell and make my money back?

Parts availability for the 16 is pretty good. You should be able to get by with small fittings that can be lost while rigging so it does not keep you from getting the boat in the water. Aside from that I would not stock inventory of parts, just wait for something to go.
