Can I get factory pinstripe and hobie stern logo replacement from Hobie for my 81 16? Ideally blue.

Anyone gotten these before and if so how?

Some dealers may have old stock, but you're better off going to a vinyl (sign) shop. They can cut the "3 line" hull stripe in any color you want and do a reasonable reproduction of the white outline "Hobie Cat" logo on the stern quarter.
