Pitchpoling is a typical issue with some catamaran designs. It just so happens that the "Banana hulled" boats are the worse because of the amount of rocker in the hulls and the poor balance.

1. Rake the mast back as far as you can. This will bring the weight aft.

2. Trap way back. Usually I had a foot on the corner casting and the other on the very end of the hull (get footstraps).
