Some updates:
The beta 2x6 was a poor choice, it ended up snapping off the first time I fired up the kicker motor. Part of the problem was that I installed it with the grain of the wood horizontally, instead of vertically. The 2x6 snapped right along the grain. I went back to using two layers of the shelf wood, and made sure the grain is vertical. That is holding up well.
The NV kicker motor only has a 30" shaft. It could use a few more inches to keep the prop from popping out of the water with big waves. I removed the height adjustment collar, which gave it another inch or so of length, and helped somewhat. I may eventually source one of the slightly larger motors, which are available with a 36" shaft,
I also found out that the meter that tells you battery charge level is not accurate for a small battery like mine. It was showing roughly 80% charged the other day, yet it ran down in about 5-10 minutes of operation. (full battery should be about 21 minutes)
Those are all of the updates for now.
