Here in swfl and the keys we typically don't go out if the air temp and/or water temp is at least 80f.
The gulf here around sarasota just cooled down a few weeks ago, It's currently 63f. It still gets to 78-80 most days and I'll go out a few times yet this yr but will have a wetsuit on board that I can slip on if I get cold, and if I capsize I can put it on in the water if needed. The problem with wet and dry suits around here is you sweat and get overheated when its high 70's quickly. This time of year we prefer key west where the gulf temp seldom gets below 75f. We can snorkle and dive all year round down there. We wear our wetsuits down there in the winter,(dec-feb). We don't go far offshore in the winter at all.
That's what we do.

Same problem crops up up here (Pennsylvania/New Jersey) when paddling hard enough. Dress for comfort and you're under-dressed for immersion.

That's part of why I prefer open/sit-on-top boats: you get splashed more so the overheating is mitigated.
