I'm curious about the 5 holes at the end of the main sail. When do I connect the mainsheet to the forward hole and when to the hole towards the stern. The only thing I have found on line was a brief mention from a resort video, saying to put it in the middle. I'm guessing that using the forward hole would open the main more, to spill more wind and would be used to depower the boat in strong winds, and the aft hole would be for lighter winds?

You have figured it out correctly. The holes change the tension in the leach of the mainsail. Light wind you want a tight leach and less twist so you pull down on the furthest hole aft. Heavy wind you want a looser leach and more twist so you pull the foot taut while letting the leach twist out.
