I've got SPDs on my mountain bike, you can adjust them to unclip with very little effort, shouldn't be a problem. Straps on bicycles also caused cramping, with SPDs, it's not an issue. Biggest potential problem would be how well bicycle pedals hold up in saltwater. They make stainless steel and titanium versions, a pedal called "Egg Beaters" are popular.
