Your logic sounds good and in a sailing race it could make a difference. From a mixed use standpoint though, where sailing and peddling go hand in hand, you may have a better overall gain from maximizing peddling performance. The potential reduction in side slip is probably minimal.
The more I sail, the more I tend to supplement with fins, especially in light air or when wanting to point upwind more than sailing alone would permit, or when just using the sail to help maximize range. So I want my fins tuned to the maximum for peddling efficiency. Once there, I am reluctant to adjust them too much.
But it depends a lot on your activities. It's certainly worth a try -- there is no better way to find out for sure. If you try it, please post the results!8)
