Hello, welcome to the forum, and congrats on your new boat! Hobie 18 parts are getting tougher and tougher to come by, particularly the larger and more expensive parts. A boat from '91 is a damn good find, as most H18's were built in the 70's and 80's, with a few in the 90's and hardly any in the 2000's. Now I don't know how old the boat you're stripping is (are they both from '91???), but I'd hang on to wings, crossbars, daggerboards, rudders, rudder castings & steering assembly, tramp & sails if in good shape, blocks, traveller car, and if you have the room, the mast and hull(s). Depending on the condition of the latter two, I'd bet you could fetch from $200 to $800 for each. The thing to do would be to find some local H18 sailors and ask around if anyone wants to buy them off of you. Of course, if you're just going to scrap it otherwise, you might as well give it away (provided you find someone who wants it). At least it'd do someone some good. They'd be very costly to ship, but if in good condition, someone might want them. It's just considerably easier if you're/they're local.
Why just a port hull? What happened to the starboard? As srm pointed out, condition of the hull is key. Regardless of the age, if it's in near perfect condition, it's worth saving. If it's got a soft spot or two. or a small hole but can be repaired, it may still be worth saving. If the whole deck/side is delaminating, then it's probably junk.
