There is a vast difference between old, used sailcloth and new.
Old is soft and very pliable - like cloth.
New sailcloth of the weight used for the main and jib is very stiff and feels more like a sheet of plastic.
The difference is the resin used in the manufacturing process. It makes the cloth hold its shape and makes it airtight. Over time, the resin breaks down and wears off.
The re-resining process will not bring the sails to "like new", but it will improve their condition significantly.
