I'm a total noob, but is there a anchor, or way to hook up one on a 16' cat if I were to ever snorkel off the boat?

Sure just tie it onto your bow line. you could stow the anchor off of the dolphin striker and tie the line up under the tramp.

You can find collapsable anchors too - I know Murrays sells them and Hobie might too.
